Peanut Butter Spicy Soba Salad

Tell someone you're eating salad for lunch and they'll usually think - bland diet food. But this salad - with creamy peanut butter, spicy noodles and a burst of crisp fresh vegetables may be healthy - but it certainly isn't bland. What I love about it is that you can substitute a lot of the ingredients for whatever you have on hand, and other than boiling the noodles, it doesn't require any cooking.

Soba noodles are a lower calorie and carb version to normal pasta, and if you choose the 100% buckwheat variety, they are also gluten free. This dish is designed to be served cold, so you can prepare it in advance and serve it as a main meal, with or without additional protein
